Blueberry muffins are my favourite. Even my husband and kids love them. While it is important to use healthy ingredients in the foods I cook, it is also important to make them palatable for eating. So I try to use healthy ingredients but make sure the food tastes delicious. These blueberry muffins are hands down one of the best flavoured muffins you’ll ever have.

They’ll be made in just 30 minutes, plus they are gluten-free (I eliminated the all purpose flour and replaced it with oat flour) and dairy free. I even discarded refined sugar from this recipe and added coconut sugar instead. If you’re using frozen blueberries, toss them up with some homemade oat flour and gently fold them into your batter. Do not overmix as the blueberries will bleed into the batter.

Divide the batter into muffin tins. I made these muffins even more interesting by adding a streusel on top. I mixed together oat flour, coconut sugar and non-dairy butter to form a crumble and added it over the batter in the muffin tins. Bake them for 16-18 minutes and dig into these warm muffins.
